Brioche Lobster Rolls

Brioche Lobster Rolls
Yields4 Servings
 4 Brioche top split hot dog buns
 4 tbsp unsalted butter
  cup small dice yellow onion
 1 lb cooked lobster meat
 ¼ cup white wine
 Sea salt and white pepper, to taste
 1 tbsp shaved chives
 2 tsp chopped cilantro
 1 oz baby arugula

Set a 12-inch sauté pan over medium heat and add 1 tablespoon of the butter.

Lay the hot dog buns on their sides for 3-4 minutes until lightly toasted.

Add another tablespoon of butter and turn the buns on the second side and toast it as well, an additional 3-4 minutes.

Remove the buns, set aside.

Add the remaining 2 tablespoons of butter to the pan and add the onions.

Cook the onions until slightly caramelized and softened, about 4-5 minutes.

Add the lobster meat to the pan and season with the salt and white pepper.

Cook for 4 minutes and deglaze with the white wine.

When the wine has almost evaporated, remove from the heat and add the chives and cilantro.

Divide the lobster meat between the 4 buns, drizzle with the pan juices and top with baby arugula.
