Chef G. Garvin’s Salmon and Gouda Melt

 4 Pieces of Cooked Salmon
 ½ cup Mayonnaise
 4 Slices of Gouda Cheese
 2 tbsp Garlic Salt
 1 tsp Red Chillies
 2 tbsp Chopped Egg Whites
 2 cups Fresh Arugula
 2 oz Hot Sauce
 4 Slices of Ciabatta Bread
 Salt & Pepper To Taste
 Olive Oil

Start by taking the cooked Salmon and break into small pieces in a medium-sized bowl.

Add the egg whites, mayonnaise, hot sauce, garlic salt, red chillies, salt-pepper and olive oil, mix well and set aside.

In a warm pan add one tablespoon butter and the sandwich, cover and let the cheese melt for three to five minutes, slice and serve.
