Bring a fryer to 375 degrees F. Line a baking sheet with a cooling rack.
In a shallow bowl, combine the flour, cornstarch, and salt. Stir to combine, then pour half the mixture into a second shallow bowl. In a third shallow bowl, combine the soymilk and several dashes of hot sauce.
Working in batches, dredge several pieces of jackfruit in the first bowl of flour, soy milk mixture, and second bowl of flour (Note: no need to shake off the excess between dredges. The extra flour and soy milk help the jackfruit form a nice crust.)
Fry until brown, about 7 minutes. Reserve on the lined baking sheet and lightly season with salt.
In a large bowl, combine the grapeseed oil, hot sauce, and honey (or agave).
Whisk to combine. Add the fried jackfruit “wings” to the bowl and toss to coat.
Serve immediately and hot with the carrots and celery.
